Maria’s full name is Ma. Bernadette D. Kawasaki. “I became Maria here because the Japanese couldn’t pronounce my name!” she recalls laughingly. She’s a Filipino Language Counselor in The Aichi Prefecture Board of Education. She currently lives in Nagoya, Japan, with her only daughter.
If you’re wondering what a Filipino Language Counselor does, she goes around elementary and junior high schools within the state every day. She deals with newly-arrived Filipino families in Japan, as well as some other English-speaking nationalities. “I usually give advice about basic Japanese lesson plans and materials to the Japanese teachers,” she says. “Sometimes, I also feel like I’m a school counselor because I talk to children and their parents about their everyday situation, and especially if the kid is in trouble.”
Maria heard about TBA because of a baking group on Facebook. “I have been a member of that group for a few years,” she says. “One time, for some reason, I kept noticing posts of beautiful bread and pastries. I asked my fellow members where they learned to make these delicious-looking treats.”
The members told her to check out The Bailiwick Academy, and the rest was history.
“I immediately looked for TBA online and signed up right away! And when I watched Chef Jimbo de Panadero’s free demos, I got more interested to enroll in his classes and make different kinds of bread!”
Maria may have had a job, but as many people know, it is very expensive to live in Japan. And as she was raising her daughter alone, it definitely was not a simple task. “I felt the difficulty when she moved up to senior high school and I enrolled her in a private school,” Maria shares. “My daughter also wanted to attend college, which of course, is expensive.”
Maria herself wasn’t able to finish her studies, but she promised herself that she would do anything to send her daughter to college. “It wasn’t a dream I was able to achieve, but I wanted things to be different for my daughter,” she says.
She shares that she also did various things to earn more money. “I also have to send money to my parents back in the Philippines. Because of that, I used to juggle various jobs, like interpreting and translating. I didn’t take rest days,” she recalls.
It came to a point that even if she loved her job, she got tired of doing the same thing over and over. Maria wanted a new way to earn more money, so she thought about doing what she liked, which was baking. “Of course, I didn’t know if I would succeed, but I had to try!” she exclaims. “And besides, I do not have any special abilities that will help me earn extra from the comfort of my home. So why not try being a baker in Japan?”
“It definitely wasn’t easy,” Maria shares. “I had to manage my time, plus we can’t forget the monetary part. The first time I tried pandesal, I failed so many times! So many ingredients were wasted.”
She admits that she also didn’t know anything about flour, or the many ingredients in making bread. “I didn’t know what each ingredient was for, or where to buy flavorings or anything! I literally had zero knowledge about baking,” she recalls. “You wouldn’t call me an instant success baker in Japan at all! Although I have baked cakes for my daughter’s birthday and for other special occasions, I sometimes fail. And I really didn’t know who to ask when I do something wrong with my bakes.”
Thankfully, Maria’s daughter helped encourage her to keep going. “She is my number one fan,” Maria beams, “and is also my top critique when it comes to baking. If she says something I made is good, I sell it. But if she’s not sure, I make some changes in the recipe.”
“She was very instrumental in my first cake order – she was very encouraging. She said, “You can do it, mommy. This is your chance to prove to yourself you are not just good but the best. That is why you bought classes right? To make delicious cakes? TBA will be very proud of you.” Maria shares that her daughter called her cake, “beautiful.”
After Maria first got to watch Chef Jimbo’s ensaymada and pandsalitos free demos, she tried making her own. “I tried the recipes, baked, and posted my outputs in that baking Facebook group, and on my own personal Facebook account,” she says. “After that, a friend messaged me regarding my post. She wanted to buy what I made!”
Maria admits that at first, she wasn’t that confident simply because she was new. “However, I did know that I needed to learn and practice techniques right away, even if I had a good recipe,” she says. “After that, I made a PayPal account so I could buy more classes and learn more. All I wanted to do was study and become better! My first two classes were Chef Jimbo’s Roll Cakes class and Chef Joey’s Artisan Ensaymada class. The rest is history.”
Maria may have taken plenty of other classes aside from TBA’s baking classes, but she feels proud that all her bestsellers come from TBA. “Our clients’ favorites are pandesal, Spanish bread, and ube cheese pandesal,” she shares. “They also like salted caramel cake, choco moist mousse cake, egg pies, chocolate crinkles, and gourmet cookies.
“And because I have work, I only bake on Friday nights, all the way to Saturday morning,” Maria explains. “I deliver also on Saturday to ensure that everything I bake is fresh.” So because she can’t bake all week long, and because sometimes she takes on other weekend work, her baking time is limited.
However, she is pleasantly surprised that her clients love her products so much that they’re willing to wait for her available baking schedules. “Japanese people are hard to please when it comes to desserts, bread, and pastries because they have the best here. But they always give my bread and cakes a thumbs up. My regular clients are always willing to shoulder the courier charge – they love what I make a lot! I think of their smiling faces every time I bake because I want them to feel happy when they eat my baked goodies. And thank God, they really are always happy. I know it because they send me thank-you messages every after delivery.”
When comparing Bailiwick to other baking and cooking classes, for Maria, TBA, is the best. One thing Maria really loves about TBA is that she can watch classes anytime. “I can watch early in the morning while prepping for work, or listen to the lessons while driving, and even while actually baking!” she marvels. “TBA really fits my lifestyle, because I am always on the go. A full-time employee like me can not afford to go somewhere to study. TBA gave me the opportunity to learn from the comfort of my home.”
She also loves the fact that she can speak to the chefs personally if she has problems with the recipes. “The TBA instructors and chefs respond quickly to every student who encounters problems while baking,” she says. “I remember there was a time I sent Chef Jimbo de Panadero a message showing him the wrinkled and flat ube cheese pandesal at midnight. A real Superman he is, he responded right away. And during some down moments and on days I feel like I am losing my confidence, I listen to Chef Joey’s voice message & words of consolation repeatedly. Plus, the instructors are so kind, sincere, and just so humble.”
More than the quality courses, Maria loves The Bailiwick Academy Student Lounge. “I get to meet new friends who are all so humble and generous with their knowledge,” Maria says. “Every member is so kind and supportive of each other, especially Ms. Grace Parazo! She is so down-to-earth and supportive of even newbies. And I really appreciate the comments of my fellow Bailiwickers when it comes to my creations. They inspire me to strive more and improve myself.”
For Maria, TBA classes really changed her life. “I am very grateful that these classes really helped me and my daughter financially, “she says. “We got through the difficult stages of the COVID-19 pandemic. I also got money to pay for my daughter’s college admission. Although it is still difficult even now, at least I now have extra income from what I love doing.”
Baking has also helped Maria relax. “Since I started purchasing classes, I do not watch TV anymore, which is good, because sometimes, watching TV is depressing,” Maria says ruefully. The lessons became my therapy. I do not really go out, so baking makes me relax and forget life’s everyday woes. And of course, seeing the beautiful goods after making them makes me happy.”
Maria also credits TBA for helping her gain confidence. “I grew up with low self-esteem. But now, I can say that I have changed, especially when I am talking about my products. I can proudly say that my products are not expensive, they’re premium!” she laughs. “I am a true baker – and honestly, finally, call myself a good kind of baker.”
For now, Maria plans to just keep earning more for her daughter’s education, and another personal reason: to be able to fly her father to Japan again. “My father has dementia, and it’s getting worse,” Maria explains. “Before he forgets me and my daughter, I want him to visit as many times as possible so we can have more moments together.”
Maria also has the urge to start her own coffee shop soon. “I am looking forward to putting my own coffee shop here someday,” she says. I asked the authorities how to go about it, and learned that I can’t afford to right now. But every time my Japanese friends and fellow Filipinos say, “Invite us to your shop’s opening!” I remind myself it may take time. But it will happen soon.”

]]>And because we’re proud of our students, we love to share their wins! We’re featuring one of them today, Rose Cardwell of RC Cakes and Pastries, based in Cainta, Rizal. Read on and get to know Rose and how enrolling in The Bailiwick Academy (TBA) helped her make her home-based bakery a big success.
Rose has been interested in baking and cooking since forever. She graduated with a degree in Hotel & Restaurant Management. She also took a culinary course at a well-known school here in the Philippines. As you can figure out, she has always had the passion to learn some baking skills and turn her passion into a business.
Because she really wanted to start a baking business, she kept looking for ways how to start one. Then she came across TBA through social media. However, she didn’t enroll right away. “I was a bit hesitant simply because I’m thinking if this will be a good investment of time and money,” she confesses. But eventually, she did push through with signing up, and she was so glad she did. “Since I realized that I can watch and do the course at my pace and my own time, I enrolled. Plus, I have lifetime access to all my courses! I realized it’s worth the money.”
Rose also describes TBA classes as all easy to follow. “The instructors are very engaging too,” she gushes. “I am pleased that I can send all of my questions to the TBA chefs. They are also more than willing to answer all my questions related to the courses that I enrolled in.”
Her first two courses were the Artisan Ensaymada class and the Flaky Gourmet Empanadas, both by Chef Joey Prats. “After I finished watching those videos, I was so proud of myself to be able to come out with perfect outputs,” Rose shares. “I let some of my friends taste my cooking and they all gave very good feedback. They encouraged me to start selling.” That led to her weekends being packed with orders of both ensaymada and empanadas.
Even though Rose has already had experience with different chef instructors and other schools, she found some online courses she took expensive and also not engaging. “There are some that are way cheaper, of course, but the output isn’t all that interesting; it will be hard to sell your outputs,” she says. “Also, with other schools, you won’t be able to consult the chefs personally in case you need help with the steps or ingredients.”
For her, TBA was still a cut above the rest. “The Bailiwick Academy has great and high caliber chefs. They are so generous and wholeheartedly share their expertise,” Rose explains. “All instructors really encourage the students to dream big and explore. There are a wide number of choices of classes to choose from this school. I appreciate that plus, I can tell that each course is well studied and developed, so each one really stands out in the market.”
Rose credits TBA for really kickstarting her bakery success. “After I learned some baking skills and perfected some recipes from my courses at The Bailiwick Academy, I started selling cakes and pastries,” she says. “I started in 2019. My best sellers are ensaymada and empanada.” Her business is now also officially DTI registered.
Of course, she didn’t stop at just those two products. “During the graduation month of the year 2020, my best selling cake was the Salted Caramel, one of Chef Bam’s classes.”
I also got the opportunity to serve food during a prom party. I presented a dessert buffet!” she exclaims. “And since that one event, I got more calls for orders of bread and desserts.”
Rose doesn’t only use her TBA skills for business, though. “All the cooking classes TBA that I took up became my family’s favorite menu for special occasions and for special weekend dinners,” she relates. “I have also done cooking for gatherings with friends, and they’re all hits!” Because of that, she and her family now barely eat outside or order food deliveries. Her family would rather have her cook instead.
And because Rose’s goal is really to develop her baking and cooking skills, and to level up her menu to be able to compete with established brands, she is really thankful to TBA because she feels like her skill have really leveled up. “I have become more confident in creating products. I have also learned to explore, to invent, and to modify recipes without fear.”
Rose credits TBA for more than just developing her skills. “Because of the classes and the encouragement of the instructors, I have learned how and where to sell my products. I now constantly challenge myself each day,” she relates. “When I lie in bed at night, I allow my imagination to think of how to have the best products in succeeding days. I challenge myself to learn and level up all the time by trying to create show-stopping cakes and pastries, whether in taste or in presentation.”
Rose has also learned plenty for her business. “I overcame the fear of competing in the market. I now confidently set the price on my products simply because I know I’m selling premium products.” And at the same time, she makes sure to not break the trust students place in her. “Now that I’m selling premium products, I make sure to keep my integrity by always using the best ingredients and by making sure my work area is clean so that my products are always safe to consume. Trust is hard to build, and happy, returning customers are the key to bakery success.”
Rose is not one to rest on her laurels. She plans to keep adding new recipes to her arsenal, as well as continually improve her skills. “One day, I want to mentor others in baking,” she shares.

Joanna Cabrera-TabuacThese were the words Joanna Cabrera-Tabuac uttered when we did her interview. There was no trace of bragging but just a sincere aura of gratitude and happiness. Wouldn’t you be just as excited if you were in her shoes?
Joanna lived a simple life in the Philippines. She graduated with a nursing degree and worked as a nursing assistant in a mental facility. She’s also very enterprising and sold all kinds of knick-knacks as a side job.
She moved to Ireland in the year 2009 with the hope of having something better for her family. She started out as a babysitter and cleaner for different families. Life was hard in a foreign land but she held on with the belief that everything will get better in time.
Joanna is a goal oriented person. She knows that once a goal is set she will do everything in her power to achieve it. With hard work and perseverance, Joanna was able to land a job as a health care assistant in a retirement home. But nursing for her was just a means to an end. Joanna’s dream is to really have her own business. She still doesn’t know what business she’ll get into so it remained at the back burner for some time.
And then COVID 19 happened.
Joanna lost her babysitting side job when the pandemic hit. She also lost a big chunk of her earnings. During this time, social media is showing that baking was becoming a trend. Joanna decided to give it a try. As she was browsing YouTube for recipe videos she chanced upon an ad for The Bailiwick Academy.
Joanna got curious and she clicked on the ad. The presentation of the courses impressed her. But what really caught her eye was the Artisan Ensaymada class. But Joanna didn’t have the tools to make the ensaymadas so she opted for the Bibingka class instead.
From that class, she was able to buy the tools needed so she can produce more products to sell. She also enrolled in more classes. The Bailiwick Academy was such a big help to her that she has this to say:

This quote holds true for Joanna. She started out small. She gave samples to her friends and co-workers. Her market eventually grew through word of mouth. Now she hardly has any rest days! If she is off from work, she makes use of this time to fulfill baking orders. Among her bestsellers are the Artisan Ensaymada, Spanish Bread and Pan de Sal. All these, of course, are courtesy of The Bailiwick Academy!
In less than a year, Joanna has established herself in her community as a successful home baker. However, she didn’t stop there. She researched about Filipino stores in her area. She inquired and brought her products for taste tests. A few weeks had passed and she didn’t hear anything from these stores. Joanna was disappointed but this didn’t deter her from going after her dream. She just kept on trying. After several tries, she got a call from a Filipino Store that she can already supply bread. Joanna was so happy!
On the first drop of her products, she noticed that there are 5 sellers of Filipino bread. Same products as hers. She was nervous, scared and doubtful. A lot of what ifs in her head.
“What if my products won’t sell?”
“What if the customers won’t like my bread?”
But backing out or giving up isn’t on her plan. She just hoped that she could sell at least a few.
Just hours after, she got a call from the owner of the shop! Her products were almost sold out! And the owner was asking when she could replenish her stocks.
That was just the start.
Now, Joanna supplies bread to 4 Filipino stores in Dublin through her Facebook page, Eirebelle’s Delights. She developed a system to balance her job, family duties and her baking business. She is a proud registered business owner too!

With her earnings from baking and her savings, she was able to pay off the mortgage of their house in Ireland. And the dreamer that she is, Joanna someday hopes to have her very own coffee shop. No doubt that this dream will become a reality in the very near future!
But until then , Joanna is very happy to have financial stability, a thriving business and a career. Yes, we can do it all if we just put our mind to it! Joanna nowadays is happy to juggle her job, her baking and her family.

]]>While in Canada, she was happily busy with her job as a Personal Care Worker and her family but she had to stop working when she had her baby. However, when Jackie was ready to go back to work, a still unknown virus brought the world down to its knees. Later known to be COVID 19, this virus spread and quickly turned into a pandemic. Jackie unfortunately had a hard time looking for a job. But tenacious as she is, she decided to enrol in IT classes with hopes that she could be adept in this industry and land a job.
Maybe it was fate that brought Jackie to this building to enrol in an IT class because this is where she saw a lot of beautiful cakes on display in a cake shop in the building. She was wide-eyed and mesmerised! Jackie immediately went inside and inquired for cake decorating classes. Fortunately, they were offering classes. Without batting an eyelash, she enrolled and finished a short cake decorating course.
But she wanted more! This was when she knew that this is the path she wanted to take.
As with all newbies in this field, she scoured the deepest alleys of the internet for recipes and cake decorating tutorials. She found a lot of them on Youtube and Google. She started her journey into baking and cake decorating. However, most of the recipes and video tutorials were hit or miss. Sometimes the recipes turn out great but more often than not she needed to tweak and experiment to achieve better results.
Through word of mouth, Jackie slowly gained some clients. She would bring some of her baked goods as gifts to her friends as trial for her products. Her products were good but she knew she could do better.
As her passion for her new craft grew, her quest to be better also intensified. She joined baking groups so she could immerse with fellow home bakers and was able to learn a slew of techniques and ideas. Still, she wasn’t entirely satisfied.
Until one fateful day, she found The Bailiwick Academy on Facebook.
It immediately sparked her interest. She explored The Bailiwick Academy’s website and she was happy to find baking and cake decorating classes. Without hesitation she enrolled in Timeless Cake Rolls by Chef Jimbo. She chose this class because there was shortage of fresh cake rolls in her area. She decided that offering freshly made cake rolls would be a good idea.
After enrolling and watching the class, she discovered that she can definitely still improve her skills and techniques. She also learned new ones. So, she enrolled in more classes. And what’s more…her cake rolls became a huge hit! Her product line also expanded. She now offers ensaymadas, custom cakes and other pastries which she also learned from The Bailiwick Academy. The pandemic did not hinder Jackie from achieving success. In fact, she became so busy she now considers this as her full time job! What’s even more admirable? She is doing all these while taking care of an eighteen month old baby! Amazing, isn’t it?

It is when you fail that you learn a lot. Don’t give up and keep on trying. Practice, practice and more practice! Just keep going. I should know because I’ve been there.”

]]>Working as a Nurse Aid in a nursing home in Canada, he has his hands full already with the demands of the job. However, baking has always been a passion of his and he decided to pursue this as a side job.
Rex has shown interest in baking while he was still living in the Philippines. He attended some workshops but they didn’t really make an impact on his baking skills.
Rex moved to Canada to search for greener pastures fifteen years ago. He would attend workshops while on vacation in Manila. He really was serious in improving his craft.
Rex also spent a lot of time experimenting with recipes and techniques he got from the internet. He started giving out his baked goods to his friends and he was selling a few cakes here and there. Until one day an opportunity fell on his lap. This was also about the same time that he discovered The Bailiwick Academy.
He saw this as a blessed coincidence. It was fate. It was meant to be.
Rex was invited to showcase his baked goods in a fair. He wanted to do well and he knows that his techniques needed some improvement. He admittedly enrolled in a class because he realised he needs help in improving his baking techniques.

Today, Rex has a registered business! And this was made by hard work, sacrifice and sheer determination. His Dessert Plus by Rex took Saskatoon by storm. And soon to conquer Regina, the Saskatchewan capital. Indeed, Rex is going places!
His weekends and some days in the week are brimming with orders of cakes and breads. He wants to accommodate more orders but a one-man team can only do so much. With a full- time job and family duties, how does he manage to do all of these?
His answer is simple: TIME MANAGEMENT.
For starters, he opens slots for pre-orders on certain days and weekends.
This way, he will be able to budget his time from prepping his ingredients, baking, decorating, folding boxes and other stuff he needs to do. He even allots time for sleeping and unexpected emergency runs to the grocery!
Moreover, he times his baking in such a manner that he can bake his cakes while his breads are proofing. (Check out some baking classes )
Very efficient, don’t you think? He also has perfected a system with how he washes his baking tools while more products are still in the oven and some are in the mixer!
He does the prepping, baking, decorating, packaging and washing all by himself.
It is quite common that fellow Filipinos yearn for some good ‘ol Pinoy delicacies, Rex’s baked goods have been picked up by a local restaurant in Saskatoon, Canada.
An entire shelf was allotted to him so he can showcase his products. Among his best sellers are Siopao, Pan de Coco, Spanish Bread and Ensaymada.
He is proud to say that all of his best sellers were learned from The Bailiwick Academy. These don’t really last long on the shelves of the restaurant. That’s how in demand his baked goods are!
We have talked about Rex’s best-selling products. But his Custard Cake deserves a special mention. It is super popular in his local community and within The Bailiwick Academy’s global community as well. He even earned the nickname “the Cum Laude of Custard Cakes”!
His version, some would teasingly comment, parang “nagpa-derma”. They are referring to the super smooth and blemish-free custard on top of a perfectly baked chiffon cake.
And guess what? This recipe is a bonus recipe from the Irresistible Silvanas class. How wonderful is that? Rex turned something free to a best-selling product!
Despite his success, Rex remained humble and hardworking. He encourages and helps his fellow Bailiwickers by patiently answering their baking related queries on the community page. He even made a step- by -step guide on his technique on how to achieve his beautiful Custard Cake.
Admittedly, Rex owes most of his success to The Bailiwick Academy. He learned the proper techniques that weren’t on Youtube or Google.

When did this idea started? Traffic! I have avoided any work that brings me to regular work hours or requires me to travel outside my city. I had suffered mostly after graduating high school when my commute got me further from home. During college I had to go to school in Manila and my classes started around the same time as the office and other schools within the same area not to mention the density of schools, offices and other establishments. I had to wake up crazy hours to at least a lot two hours to make it on time! An hour or 30 minutes later might not cut it close. Sometimes I can get delayed by thirty minutes and sometimes an hour. Better be too early. There was one time where I left the house 3 hours ahead so I can be relaxed before taking a test and have time to study a bit more. As if the universe conspired to play a joke on me, I was late for thirty minutes! Of all the days a fire can break out it has to be at my route and when I have an exam. So much time of our youth wasted! There are also safety issues that all have to worry about. I was fortunate enough not to experience any life threatening encounters however I have seen a couple of times people robbed in front of me while in a jeepney. This got me thinking. What are our options as parents or students or anyone who wants to get their education done at home? Homeschool, right? I did a few digging as I am thinking of this option for my children.
I just found out that there is an organization that aims to equip homeschools and organizations for institutions which offers homeschooling called Homeschool Association Of The Philippine Islands. It is a non-profit and non-stock group supporting existing and new institutions to the growing homeschooling movement. Their aim to make homeschooling recognized as an available and respected form of education.

Most of us went through a traditional school. A traditional school, means a building with classrooms and within the classrooms are desks with students and a teacher. A teacher or in some cases the students transfer to another classroom for each of the class. I went through with the former until high school. A teacher would enter our room, write on the board, ask questions, we would recite, take quizzes and take exams whether at the end of each semester or at specific periods of our student life. After each semester the cycle goes on and on until graduation.
Our parents and their parents , almost gone all through that. It seemed that as you move back in time the teachers are stricter. I experienced my parent’s iron fists when it comes to teaching and ensuring that I study for each exam. No TV during weekdays and make sure I get high grades. For example, if the passing for the exam is 70% out of 100% of the questions, I should get 88%! My mom actually said that! It is like there is another set of standards that must be met beyond the country’s accepted curriculum. Grade comes first! Getting the medals and the honors, are the pinnacle of success for every student or in my case for my mother! This does promote that the grades are more important than learning!
When I had my child, I swore that I would lighten up. I do not want them to be like me who ended up hating to study and for them to feel that it is a punishment. As I was researching for different schools, I went to the “best” traditional schools and checked out their facilities and their methods. I also went to the new schools, which has been around just for a few years. This is when I discovered progressive schools.
Progressive because they are introducing a more customized education for the child,. Some of the schools do not even have grades! This concept is foreign to me however it is interesting, If you look at traditional schools, you may compare it to an assembly line. Mass education. Get as many students taught at you can for a defined period. Progressive schools still has a class but it is noticeably smaller. This is to add more focus on the student. There are no tests per say. Students would not know that a task being assigned to them is the actual test. The subjects at times may not be defined. Classes like languages such as English for example and their mother tongue may be held at the same time to teach the student how to identify objects or construct the same idea into different languages.
We have come a long way from what we are used to. I may have enjoyed my time as a student if I were a product of this educational system. For parents out there, I encourage to take a look at these schools. It is high time we put learning as priority over grades.
