As of this writing, it’s the holiday season here in the Philippines! That means kitchens around the country are filled with bakers doing holiday baking and churning out various sweets—including the traditional Christmas cake, the fruit cake. But what is a fruit cake, exactly? 

Not to worry! If you’re curious about this iconic dessert, you’ll be happy to hear that this article will dive into the world of fruit cakes and discover why it has become synonymous with a Christmas menu.

Let’s get started, shall we?

So…what is a fruit cake?

What are fruit cakes, indeed? At its core, a fruit cake is a rich, dense cake packed with dried or candied fruits, nuts, and spices. The ingredients are often soaked in spirits like brandy or rum, which not only adds a depth of flavor but also acts as a preservative. 

The cake is typically made well in advance of Christmas, allowing it to mature and develop its complex flavors. A fruit cake can also come in different shapes. It can be a round cake or be presented as mini loaf cakes, depending on the cake pan used. Mini loaves are easier to serve—something to note if you’re having a lot of guests who love fruits and cake in one dish!

Where is fruit cake from?

The origin of fruit cake can be traced back to ancient Rome, where a simple version was made using barley mash, pomegranate seeds, raisins, honeyed wine, and pine nuts. This early version was more of an energy-rich food than a celebratory treat. Since it was easy to carry around and  didn’t rot for a long time, it became a very popular snack for Roman soldiers, who called it “satura.”

During the Middle Ages, with the arrival of preserved fruits, honey, and spices, the fruit cake began to resemble what we know today. The Crusaders reportedly carried this durable, energy-packed cake on their journeys for the same reason as the Roman soldiers did: due to its long shelf life. The bakers at the time also added more fruit and nuts.

Fruit cakes were eventually brought to America by European colonists and became especially popular in areas with limited access to fresh fruit. And now, here we are: a world where fruit cake is looked for during Christmas and other special occasions, like weddings.

Why This Dessert Is Associated With Christmas

This is actually a pretty interesting fact in the history of fruit cake. In the 18th century, laws were passed to restrict the creation of the fruit cake (called as a plum cake back then) in Europe, as the cakes were considered as “sinfully rich.” They were only allowed to be created during the holiday season, especially since the ingredients to make this at the time were considered both rare and expensive.

So, it makes sense that fruit cakes became a special treat for big occasions, right? Especially for Christmas. But why exactly fruit cakes became a Christmas thing is a bit of a mystery. They were first made as a high-energy snack, not really for celebrations.

One interesting story is from Swiss Colony. They say that in England, people used to give fruit cakes to Christmas carolers, who were often not very rich. This might be one reason why fruit cakes got so popular for Christmas.

What are the ingredients in a fruit cake?

Fruit cake is known for its diverse ingredients, which can vary based on personal preference, the cake recipes being used, or regional traditions. However, the usual fruit cake recipe includes the following components:

What is the shelf life of a fruit cake?

A fruitcake that is tightly wrapped with aluminum foil or plastic wrap can be stored for up to 1 month in a cool, dark pantry, 6 months in the refrigerator, and 12 months in a freezer. Some people even feel that older fruit cakes taste better because of the alcoholic content. Of course, if there are signs of spoilage such as mold or off-odors, make sure to discard it! 

But why does fruit cake last long, exactly? Well, one reason is thanks to its high alcoholic content. Alcohol acts as a natural preservative which prevents spoilage.

As for the other factors, well, it’s the same answer for the question why is a fruit cake dry. Its high sugar content helps absorb moisture, reducing the risk of bacterial growth. The dried fruits in the cake have low water content, further inhibiting spoilage. The cake’s dense texture, achieved through slow baking at low temperatures, also helps in preserving it. 

Interestingly, the same things that make fruit cake last a long time have also made it a bit of a joke. So, first things first. Polvoron, often referred to as “polvorones” in Spanish, is a traditional Filipino shortbread cookie that is renowned for its crumbly and melt-in-your-mouth texture. It is a sweet, powdery confection characterized by its oval or round shape, depending on the polvoron molds used. The polvoron or shortbread cookies are usually presented in colorful cellophane or Japanese paper—the colors add to the fun of eating one.

  • Toasted flour: Toasting flour provides the polvoron with its crumbly texture. This flour is carefully toasted for the polvoron’s distinct flavor and aroma.
  • Powdered milk: Powdered milk is a must in any polvoron recipe. It adds a creamy and milky flavor and is one of the key elements that set it apart from traditional shortbread cookies.
  • Sugar: Polvoron’s sweetness comes from sugar, which is blended with the other ingredients to create a balanced taste. It can be granulated sugar, milk sugar, or any kind of powdered sugar. Do take note that the choice of sugar affects the color of your end result.

You might assume that polvoron doesn’t expire because of its dry texture. However, like any other food product, polvoron can expire. That’s especially true since it has dairy content from powdered milk and butter. 

Always check the expiration date if store-bought. If you’ve made homemade polvoron, consume it within 1-2 weeks for the best taste and freshness. The best way to store polvoron and keep it fresh is to store it in an airtight container in a cool, dry place, or refrigerated for a longer shelf life.

Can polvoron make you fat?

Polvoron contains sugar, butter, and milk – all of which have calories. Plus, it’s a sweet treat and is definitely not a keto dessert food. This means that, yes, regularly consuming them in large amounts without burning off the calories can lead to weight gain.

Can polvoron have flavors?

Yes, you can make polvoron that has different flavors. One popular variant is the ube polvoron, which incorporates the flavor of ube or purple yam. This gives the treat a distinctive purple hue and adds a unique taste to the candy.

Other flavors can be white chocolate, peanut, mango, matcha, cookies and cream and pretty much whatever else you can think of! 

How do you make polvoron?

There are plenty of polvoron recipes you can follow, but here are the basic steps:

  • In a pan, toast the flour over low heat until it turns golden brown. Let it cool.
  • If you want to add toasted rice, get a separate pan, then toast the rice until it’s crispy and fragrant. Allow it to cool, then crush it into small bits.
  • In a mixing bowl, combine the toasted flour, milk, sugar, and butter, and crushed toasted rice. Melt the butter and add it to the dry mixture. Mix well until the ingredients are fully incorporated.
  • Using polvoron molds or your hands, shape the mixture into your desired shapes, whether round, oval, or whatever shape of mold you have. 
  • Let the polvoron set in the refrigerator for about 30 minutes.
  • When done, you can serve as is, or wrap them in colorful cellophane or paper.

But sometimes, while biting into one, I think of many questions about it. For example, is it really Jamaican? And why is it yellow?

When were Jamaican patties made?

Food news: cupcakes are not the same as muffins! Although similarities between cupcakes and muffins exist, such as they’re sweet, delicious, and handy to eat, there are distinctions. So what’s the difference of a cupcake and a muffin?

Well, one quick difference between a cupcake and a muffin you can notice is, according to The Daily Meal, that cupcakes are cakes, while muffins are quick breads. But it doesn’t stop there. We’ll break down more differences in this article! 

Let’s jump right into it, shall we?

Difference of Cupcake And Muffin: Ingredients

Cupcakes are literally the miniaturized version of the usual cakes. That means when you’re making these, you’ll be using a batter that is based on standard cake recipes (which, of course, includes cake flour), which will have more butter (or other fat source) and sugar included. You might even find yourself including ingredients such as whipped eggs or mayonnaise to add texture.

And, of course, you’ll usually have frosting sitting on top of cupcakes. An example are those you can make in The Bailiwick Academy’s Flowers in Full Bloom class.

As of this writing, it’s the rainy season in the Philippines. And when it comes to hearty, comforting Filipino dishes during this wet and cold period, there are few that can rival bulalo. But what is bulalo, exactly?

Well, that’s what we’re going to discuss in this article—keep on reading!

So… what IS bulalo?

Bulalo is one of the many traditional Filipino soup dishes that has beef as its main ingredient. There are many variants of this beef soup dish, but generally, making it consists of boiling beef shanks and marrow bones for several hours. Doing this lets you extract all the flavor and tenderness from your ingredients.

When you’re done with the process, the result is a robust broth that is packed with rich, savory goodness, thanks to the fall-of-the-bone tender meat and vegetables.

What is bulalo called in English?

In English, bulalo is “bone marrow stew” or “beef bone marrow stew.” Doesn’t exactly roll off of the tongue nicely, right?

Why is it called bulalo?

Filipinos like to keep things simple, which is probably why they just named this Filipino dish after its main ingredient: beef shanks. Beef shanks are a special cut of beef that includes both the leg bone and the meat around it.

Because the legs are used a lot, beef shanks can be tough and dry. However, inside the bone, there’s a juicy treat of collagen and fat-filled marrow. To bring out the amazing flavors, bulalo is cooked slowly in moist heat.

What is bulalo’s history?

So where did bulalo come about, exactly? Or who started making bulalo soup?

Well, according to Yummy.ph, you can trace the origins of this Filipino beef to the Southern Luzon area, specifically in Batangas. Apparently, back in the 16th century, Spaniards and Chinese traders brought cattle to the Philippines, and made Batangas all about cattle trade and a source of plenty of beef dishes. That’s probably the reason why Filipinos generally associate Batangas with bulalo. 

Lately, though, Tagaytay is now also known for this beef recipe, not just for buko pie as pasalubong. It makes sense, since Tagaytay is nearer, also has a colder climate, and has a nice view of the Taal volcano. 

Of course, now, you don’t have to go far away to eat some bulalo. You can buy this in various restaurants or even cook bulalo at home.

What are the ingredients of bulalo?

To make one of the best soup recipes ever, you’ll need the following ingredients aside from beef shanks:

Marrow Bone

As mentioned above, marrow bones are an essential component of bulalo. These bones, rich in collagen and fat, contribute to the richness and depth of flavor in the soup. When simmered for an extended period, the marrow melts into the broth, resulting in a decadent taste that will keep you coming back for seconds!

Sweet Corn

Sweet corn is a popular addition to the soup, thanks to the sweetness of the corn complementing the savory flavors of the broth and meat. You’ll also get an additional delightful crunch and texture!

Bok Choy

Bok choy, a leafy and vibrant green vegetable, is often added to bulalo towards the end of the cooking process. In the Philippines, it’s known as pechay. The crisp texture of its leaves also provide a refreshing contrast to the rich and meaty elements of the soup.

Other Ingredients

Since this is the Philippines, we’re not content with just the usual bulalo recipe ingredients. That’s why you might spot variations in bulalo, like adding black pepper, bagoong alamang, bay leaves, onion leeks, green onions, garlic, and Chinese cabbage. These ingredients all add complexity and depth to the flavor profile.

What is the difference between bulalo and nilaga?

So if you look at the ingredients, you might wonder how bulalo is different from other beef dishes like beef nilaga and cansi. Well, one major difference of bulalo and nilaga is the kind of beef used—nilaga uses beef chunks.

As for cansi, while it is also made from beef shank and bone marrow, it is slightly soured with fruits. It’s actually cooked sinigang na bulalo at times. The soup is also different in color and is cooked with ingredients like tomatoes, patis or fish sauce, and even siling labuyo.

How do you cook bulalo?

Cooking bulalo is a slow and meticulous cooking process. The broth is simmered for hours, allowing the flavors to meld together and intensify. The long cooking time ensures that the beef becomes tender and the flavors reach their full potential.

Of course, before anything else, make sure to clean the beef shanks first by boiling them for 10 minutes. After that, submerge the clean shanks in water in your cooking pot over medium heat. When it boils, remove any scum that rises to the surface.

When the broth clears up, you can place the smaller ingredients. This is where patience comes in: you’ll have to let it simmer for hours, or at least until the meat falls off the bone. That means it’s tender.

You can then add the corn and bigger ingredients, then cover your pot. Let it simmer until all ingredients are softer, then you’re done!

How do you serve bulalo?

For best results, serve this soup recipe hot and freshly made. Speaking of best, eat it with hot rice!
